Basic Balsamic Vinaigrette – one salad
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp chopped garlic (fresh, if you’ve got it)
Dash of cayenne pepper
Stir together, let it sit with a napkin or paper towel covering it while you assemble your salad, and pour!
Now, I love garlic and spice, so I actually use more than what I’ve listed above, but make it to your taste. If cayenne is too spicy, try coarse ground black pepper. Use more or less garlic.
Lemon Vinaigrette – 4 salads
1 tbsp Dijon mustard
¼ cup lemon juice (fresh or bottled)
1 tsp black pepper
½ cup extra virgin olive oil
Stir until well mixed. This tops a kale salad exceptionally well – the lemon helps to keep the kale from being too bitter.
These take just a few minutes and are less expensive and healthier than commercial salad dressing, even prepared vinaigrettes!
