Personally, we think parsley is delicious all on its own (and did you know it’s a natural breath freshener!), but it also turns out that parsley has tremendous health properties that are not found in many foods. Particularly notable are its volatile oil components, which can inhibit tumor formation and make it a ‘chemoprotective’ food (meaning it can actually neutralize carcinogens in the body). It also has an amazing flavonoid profile that can prevent oxygen based damage to your cells. To round it out, it is an excellent source of vitamin C, a good source of vitamin A, and even has a kick of folic acid. With only 3 calories per 2 tablespoons, this is truly a healthy addition to any diet. Which begs the question: how do you incorporate this tasty herb?
Since it is ‘Quick Fix Friday’ here is a quick and easy smoothie recipe that incorporates this unique herb. It is flavorful and also includes a fruit serving and 2 vegetable servings!
Super Green Smoothie (2 servings):
½ cup water
½ medium cucumber or zucchini, chopped
1 orange peeled, chunked, and seeded
1 cup mixed spring greens
1 celery stalk
1 cup baby kale or spinach
1 small carrot
½ cup parsley leaves
1 green apple, cored, chopped
2 cups ice cubes
Add the above ingredients into your blender, mix and enjoy! Just make sure you have a blender that can handle some of the tougher ingredients like celery. If your blender can’t handle these, but you have a food processor, you can use the food processor to break down the fiber and make small pieces that are more manageable for your blender!
